When you start to choose an healthy diet, one of the most difficult things to do is to find a good alternative to high calories and high fat snacks, refined sugar, butter or palm oil. Not being able, for work reasons, to eat a proper lunch one of my most ambitious goals has always been to find some healthy snacks that I can eat in mid-afternoon, mid-morning or at any time I feel the need.
Since I believe that this topic could be of interest for many people I thought I’d start a series of posts in which I describe the best healthy snacks, purchased or homemade.

To begin I would like to tell you about the wonderful chia seeds pudding: a quick and easy recipe that allows you to consume these seeds full of good properties.
Here the ingredients you’re going to need for 2 people:
4 tablespoons of chia seeds
1 cup of almond milk
1 tablespoon maple syrup (agave syrup or honey)
2 tablespoons dried cranberries
1 tablespoon chopped walnuts or almonds
1 tablespoon pistachios

Pour chia seeds in a bowl and cover with almond milk. In this way seeds will absorb milk assuming the pudding consistency.


I usually add dehydrated berries at this stage so they will get soft and spongy.

Then I cover the mixture with plastic wrap or foil and leave it in the fridge for a couple of hours. If you prepare this pudding in the evening for breakfast you can also leave it overnight.

After the ‘pose’ I add maple syrup ( you can also use agave syrup or raw honey)

chopped pistachios and walnuts.

And now your pudding is ready to be enjoyed. Good for your health, for your diet and very satisfying too.
